I read in the manual that my 09 shelby GT500 uses Mercon V automatic transmission fluid. I read elsewhere that it is a type III synthetic whatever that means,,,but read also that it was a high quality fluid. Is there anything better to use or should it be left alone? I also could not find an interval to change the fluid in my shelby. Is this true? How does one check this fluid level? Is there a procedure to drain, flush and change the fluid if a person wanted to?

The fluid required is Mercon 5. In my opinion this is the best fluid for it. The interval for changing it is 150K miles. That is correct - 150,000 miles.
There is no flush procedure. The fill plug is on the drivers side aprox half way up on the side of the trans. It is full when fluid is at the bottom of the fill plug hole threads.
I would drive the car and forget about it.
